FRUGAL MEAL IDEAS - SKIRT STEAK TACOS

Skirt steak is one of the cheaper cuts of meat in our grocery store.  This is a great go to when you are craving steak but cant afford a nice t-bone.



GRILLED SKIRT STEAK TACOS

1 lb skirt steak

Marinade
1/4 cup olive oil
1/4 cup cilantro, chopped
2 garlic cloves
1 T white wine vinegar
juice of 1/2 blood orange
juice of 1 lime


Combine all marinade ingredients in a food processor and pulse until all the elements are finely chopped (just a few times should be enough!). Salt and pepper both sides of the skirt steak and marinate in the marinade for a minimum of 30 minutes or up to 8 hours.  Remove the steak from the marinade, pat dry, and grill at high heat for about 2-3 minutes on each side. Let the steak rest for about 10 minutes. Slice against the grain and serve with toppings such as pico de gallo, guacamole, fresco blanco cheese and fresh cilantro on a grilled tortilla or flatbread.  Perfect with a beer!
