BEST PICO DE GALLO (SALSA) EVER....MY BROTHER PETER'S RECIPE

PETER'S PICO DE GALLO



I recently went to visit my mom in California.  My brother had just moved back in with her after  spending quite a bit of time in Mexico.  Upon arriving back to her house she announced the first thing we were going to do was have a lesson in making salsa!  This is the most wonderful result of that great cooking lesson...

4 ripe plum tomatoes, seeded and finely chopped
1 small white onion, finely chopped
1/2 cup cilantro leaf, chopped (or more to taste!)
2 -3 jalapeno peppers, seeded and finely chopped
1 fresh lime squeezed
kosher salt

Directions:

Combine all ingredients; cover and refrigerate for at least an hour.
